Software RAID and Hyper V

I'm investigating the pros and cons of software vs. hardware RAID 1, when using Hyper-V.

As a faster storage option for a VM, I am considering 2 small enterprise SSDs running outside of our existing mechanical disk array, configured in RAID 1. The drives will likely be m.2 interface, adapted into PCIe slots. I suspect this would make hardware RAID difficult.

We are a small business looking for reliability and decent performance on this VM (better than storage on current 10K SAS). The aim is to have resilience in the event of a failed drive.

Are there any factors to be aware of if configuring these in Disk Management? I'm wondering if this is the most simple and inexpensive route. Also if one of the drives died would the VM remain operational?
